Yanagi Sashimi Knives
A long slicing knife designed for creating clean, single-stroke cuts of sashimi and sushi.
The yanagiba, meaning willow-leaf blade, is the most recognizable sushi knife. It is the Osaka (Kansai) style of sashimi knife. Its length lets you slice a fillet in one continuous pull from heel to tip, so the fish is never sawn back and forth. The single-bevel edge leaves a bright, smooth surface and keeps the texture of raw fish intact.
Most home cooks start with 240 to 270mm, while sushi chefs often use 300mm or longer. Yoshihiro yanagi knives come in traditional White and Blue Steel, Honyaki and Suminagashi Damascus, and in stain-resistant VG, Ginsan and Inox steels. Left-handed versions are available.
