Two families
Double-bevel vs. single-bevel
Japanese kitchen knives fall into two families. Double-bevel knives are sharpened on both sides, so they feel familiar to anyone used to a Western chef knife – this is where the gyuto, santoku, nakiri, petty and sujihiki belong. Single-bevel knives are the traditional tools of Japanese cuisine, sharpened on one side for exceptionally clean cuts through fish and vegetables: the yanagi for sashimi, the deba for breaking down fish and the usuba for vegetables.
