Product Details

This handle is designed to fit Yoshihiro Yanagi knives. Yanagi knives are long, single-edge blades used for slicing sashimi and other delicate cuts.

This handle is crafted from Yoshihiro's green stabilized maple burl, paired with a water buffalo horn bolster. Maple burl comes from the swirled, knotted grain found in maple trees, and stabilizing it with resin locks that figure in place while adding resistance to moisture and everyday wear, so every piece has its own grain pattern. Water buffalo horn is a natural material, so its color varies from piece to piece, making each handle one of a kind.

It's built in the traditional octagonal Japanese handle shape and is available for blade lengths of 9.5" (240mm), 10.5" (270mm), and 11.8" (300mm). This listing is for the handle only; the knife blade is sold separately.
