Santoku (Multi-Purpose Knife)
A compact all-around kitchen knife ideal for everyday slicing, dicing, and chopping.
Santoku means three virtues. The name usually refers to its ability to handle meat, fish and vegetables, or to slice, dice and mince. Its shorter, taller blade and rounded sheep's-foot tip make it easy to control, and its flat edge suits the up-and-down push cutting common in Japanese home cooking. The tall blade also helps you scoop ingredients off the board.
Most santoku knives are 165 to 180mm, a good fit for smaller kitchens and cutting boards. Choose from stainless Inox, VG-10 Damascus, Ginsan, SRS13 and high-carbon Blue Steel. For a longer all-rounder, see our gyuto chef knives.
