This knife is part of a limited edition, handcrafted with exceptional skill by our master artisans. Featuring Aoko Blue Steel #1 with a hardness rating of 64 on the Rockwell scale, it showcases intricate wave-like patterns forged with iron, demonstrating the high level of expertise required to create knives that excel in both performance and beauty. The term Namiuchi, meaning "wave forged," reflects the harmonious blend of aesthetics and quality craftsmanship that defines these exquisite tools.

Our handmade Yoshihiro Aonamiuchi knives are crafted with meticulous attention to detail, resulting in high-quality knives that are indispensable in any kitchen. The Blue Steel #1, forged with iron to create stunning mist patterns, emphasizes refined forging and polishing techniques, ensuring each knife is not only functional but also a work of art.

The term Unagi nobori captures the essence of rapid ascendance, akin to an eel climbing upstream to reach its breeding grounds. This expression highlights the growing popularity and value of a product, akin to the determination of eels that become difficult to catch due to their slippery nature.

Complementing the blade is a traditional Japanese-style handcrafted Yew Tree wooden handle, designed in an octagonal shape and affixed with a Water Buffalo horn bolster. The Hamokiri is a large slicing knife traditionally utilized for chopping small, thin fish bones, loosening the fillet for serving as Sashimi. The Hamo translates to pike conger, making this knife an essential tool for chefs who value both tradition and functionality in their culinary practices.
