Can I use a honing steel to sharpen my knife?

We highly recommend using whetstones for sharpening. Japanese knives are crafted from hard steel, which is sensitive to impact. This hardness gives Japanese knives their remarkable sharpness and edge retention, but using devices other than whetstones can damage the blade.

My knife has water stains on the blade. Does this affect its performance?

While water stains can be bothersome, they are generally cosmetic and do not affect performance. A rust eraser can remove most stains, and applying knife oil before storage can help prevent further staining. Each Yoshihiro knife is handcrafted using traditional techniques and high-quality materials that have been valued for generations.

Can I have my knife engraved?

I have a knife from another brand. Will your Saya fit?

It’s difficult to guarantee compatibility with non-Yoshihiro knives due to differences in shape, thickness, and size. To help us determine the fit:

How do I maintain my whetstones?

To ensure your whetstone stays in optimal condition:

  • Store it in a cool, damp area, away from direct sunlight or heat.

  • Maintain a flat surface, as a concave surface can hinder the sharpening process.

What type of whetstones should I use?
