Experience the superior edge retention and sharpness of our high carbon Gintsuru Yanagi Kiritsuke sushi knife, crafted from Ginsan High Carbon steel. This next-generation steel, enhanced by modern metallurgy, resists discoloration and rust, making it perfect for high-paced kitchens. The single-edged ensures exceptional sharpness and durability, while the octagonal premium stabilized maple burl handle with water buffalo horn bolster (color varies) provides a lightweight, well-balanced grip.

With a hardness rating of 63-64 on the Rockwell scale, Ginsan steel combines the best of traditional Japanese craftsmanship with stain-resistant properties. The beautiful mist-like patterns, known as Hongasumi, result from forging Ginsan with iron, creating knives of the highest quality that perform effortlessly in demanding environments.

The Yanagi Kiritsuke is designed for precise slicing of fish, maintaining ingredient integrity with long, uninterrupted strokes. Its slightly heavier and wider blade, along with a thicker spine, balances perfectly for chefs with smaller workspaces. Each knife comes with a protective saya (wooden sheath) for safe storage and an elegant appearance.

Care & Sharpening: To maintain its sharp edge, sharpen with only water whetstones. Hand wash and dry immediately after use, especially with acidic ingredients. Use solely on boneless fish.
