Blade Hardness

HRC (Rockwell Hardness) measures how hard the blade's steel is. Kitchen knife steel typically falls in the high-50s to mid-60s on this scale. Harder steel is built to hold a fine edge over long use, while softer steel favors flexibility and easy resharpening. The right HRC depends on the steel and design, not a single higher-is-better number.

Stain Resistant

This steel is not stain resistant. High-carbon steel can rust or develop a patina if not kept dry and cared for, in exchange for the sharper edge it holds.

Saya Cover

This knife comes with its saya cover included at no additional cost, shaped to its exact blade for the same custom fit customers pay extra for on other knives.

Product Details

Forged from High Carbon Blue Steel #2 with an impressive HRC 63-64 hardness, the Hongasumi Kiritsuke features a traditional single-edge, ensuring exceptional edge retention and the ability to achieve a finer edge than a Kasumi Kiritsuke made from White Steel #2. Designed for intermediate-level chefs, this knife is ready to use straight out of the box, complete with a magnolia wood sheath, knife oil, and rust eraser. Each piece is meticulously handcrafted in Japan, offering a level of quality unmatched by mass-produced alternatives.

Our handmade Yoshihiro Hongasumi knives are skillfully forged by master artisans, combining expert craftsmanship with superior performance. The Blue Steel #2 core, hardened to HRC 63-64, is fused with iron to create a breathtaking mist-like Hongasumi pattern. Through precise forging and expert polishing, this knife achieves an exquisite balance of beauty and functionality.

Complementing the blade, the handcrafted Rosewood handle with an Ebony bolster enhances both aesthetics and grip, while the protective wooden Saya sheath safeguards the knife when not in use. As a traditional Japanese all-purpose chef's knife, the Kiritsuke embodies elegance and precision. Its elongated profile enables effortless slicing of sushi and sashimi, akin to a Yanagi, while the wider blade offers versatility for a variety of culinary tasks. The sword-like tip ensures balanced weight distribution, allowing for intricate knife work and refined presentation. A handcrafted knife like this transforms even the simplest cuts into an elevated experience of artistry and performance.
