Mizu Honyaki translates to "true forged," embodying the purest reflection of traditional Japanese sword-making artistry. Our master craftsmen employ the same time-honored techniques passed down through generations, producing knives of exceptional caliber. The hand forging of these knives from a single piece of high-carbon steel demands extraordinary skill, enduring the extreme temperatures of thousands of degrees within a furnace.

Our handmade Yoshihiro Mizu Honyaki knives exemplify meticulous craftsmanship, forged from the highest quality steel according to ancient methods. Each knife is created by master artisans with over 50 years of experience, ensuring that every blade reflects the pinnacle of Japanese knife-making expertise. Made from a single piece of Blue Steel, with a remarkable hardness of 65 on the Rockwell scale, the steel is heated in furnaces that reach extraordinary temperatures, quenched in cool water for optimal hardness, and polished to a brilliant mirror finish, blending stunning aesthetics with top-tier performance.

Complemented by a traditional Japanese style handcrafted premium Ebony wood handle, each knife features a Water Buffalo horn bolster and Sterling Silver Ring. A protective wooden sheath, known as a Saya, is included, safeguarding the knife and enhancing its presentation when not in use. The Yanagi is a long slicing knife specifically designed for crafting thin slices of fish for sushi and sashimi.
