Our handmade Yoshihiro Kasumi White Steel knives are expertly crafted by master artisans in Japan, blending traditional techniques with exceptional artistry. The White Steel #3 blade, with a hardness of 62 on the Rockwell scale, is forged with iron to produce stunning mist patterns known as Kasumi. This premium steel ensures remarkable sharpness and durability, making it a prized possession for both collectors and professional chefs.

This one-of-a-kind Yoshihiro Kasumi Deba knife features an exclusive hand-etched design using pure gold, elevating it beyond the functional to a true work of art. It displays the iconic five-story Japanese pagoda (Gojū-no-tō). Each design is a masterpiece in its own right, making the knives as much a display piece as they are a high-performance kitchen tool.

With an impressive blade length of 300mm (11.8”), this Deba knife is larger than typical versions, giving it the power to butcher and filet whole fish, including cutting through heads and bones with ease. Its fine tip is designed to expertly separate flesh from bones, ensuring precise cuts. Although perfect for fish, it can also be used for chicken and meat, though not recommended for cutting through large bones.

Complemented by a handcrafted Magnolia wood handle and a Water Buffalo horn bolster, this knife not only performs but also showcases the elegance of traditional Japanese craftsmanship.
