Blade Hardness
HRC (Rockwell Hardness) measures how hard the blade's steel is. Kitchen knife steel typically falls in the high-50s to mid-60s on this scale. Harder steel is built to hold a fine edge over long use, while softer steel favors flexibility and easy resharpening. The right HRC depends on the steel and design, not a single higher-is-better number.
Stain Resistant
This steel is not stain resistant. High-carbon steel can rust or develop a patina if not kept dry and cared for, in exchange for the sharper edge it holds.
Saya Cover
This knife comes with its saya cover included at no additional cost, shaped to its exact blade for the same custom fit customers pay extra for on other knives.

Product Details
The Usuba Kama-gata is a traditional Japanese vegetable knife reminiscent of a small cleaver. It features a sharp tip that is ideal for more intricate tasks, while the blade is hefty enough to chop through heavy root vegetables and thinly slice delicate tomatoes with ease. Its versatility makes it an indispensable tool for chefs looking to elevate their food prep.
Our handmade Yoshihiro Kasumi knives are crafted by master artisans, combining exceptional craftsmanship with outstanding performance and value. Made from White Steel #2, with a hardness of 62 on the Rockwell scale, these knives are forged with iron to create the unique mist patterns known as Kasumi. This traditional process not only enhances the knife's aesthetic appeal but also contributes to its superior edge retention and cutting performance.
Each Yoshihiro Kasumi knife is complemented by a traditional Japanese-style handcrafted Rosewood handle, offering comfort and control during use. A protective wooden sheath, or Saya, is also included, ensuring the blade is safely stored when not in use and adding to the knife's refined appearance. With their impeccable craftsmanship and remarkable functionality, these knives are truly a chef's essential tool.
