Forged from Shiroko High Carbon White Steel #2 with a Rockwell hardness of 62-63, this Hongasumi Yanagi Kiritsuke features a traditional single-edged grind for superior edge retention and the ability to take on a finer edge than standard Kasumi blades. Ideal for intermediate chefs, it comes ready to use out of the box. A lacquered Magnolia wood sheath, knife oil, and rust eraser are included. Each knife is 100% handcrafted in Japan, not mass-produced.

Our Yoshihiro Hongasumi knives are meticulously crafted by master artisans, offering unmatched performance and craftsmanship. The White Steel #2 blade is forged with iron, creating beautiful mist patterns and polished with the utmost attention to detail.

The knives feature a handcrafted Japanese Ebony handle with a water buffalo horn bolster and come with a magnetic oak wooden Saya for protection. The Saya is treated with non-toxic lacquer, offering resistance to odors, stains, and chips.

The Yanagi Kiritsuke has a slightly heavier, wider blade with a thicker spine and a sword tip that helps balance the knife. It's perfect for chefs who want a Yanagi but have limited space. Even simple tasks are elevated with a handcrafted knife that is both beautiful and functional.
