Honyaki translates to "true forged" and represents the purest expression of the traditional art of Japanese sword making. Our master craftsmen utilize the same age-old methods and techniques passed down through generations, creating knives of exceptional quality. Hand-forging these blades from a single piece of high carbon steel requires extraordinary skill, withstanding temperatures that soar into the thousands within a blazing furnace.

Each handmade Yoshihiro Honyaki knife is crafted with unparalleled skill, forged from the highest quality steel using traditional methods employed by master artisans, some with over 50 years of experience. Honyaki, meaning true forged, symbolizes the pinnacle of Japanese knives, demanding expertise from seasoned knifesmiths well-versed in the ancient art of sword making. Crafted from a single piece of White Steel #2 with a remarkable hardness of 65 on the Rockwell scale, the steel is heated in hearths reaching thousands of degrees, quenched in cool water for optimal hardness, and polished to a brilliant mirror finish, resulting in knives that perfectly blend aesthetics with performance.

The Sakimaru Takobiki is a long slicing knife specifically designed to create paper-thin slices of fish for sashimi. Its round sharp tip is particularly effective for cutting the long tentacles of sashimi. The beauty of its elegant, thin blade lies in its ability to glide through ingredients in long, uninterrupted strokes, preserving their integrity and freshness. Thinner than a Yanagi, the Takobiki is a unique tool for preparing delicate ingredients and is especially valued for its precision in crafting perfect sushi rolls.
