Our Yoshihiro Mizu Yaki Aoko Honyaki Mirror-Finished Knives represent the highest level of quality in Japanese cutlery. The Ao Honyaki process involves meticulous pure water quenching, drawing out the hardness of refined steel while infusing it with the resiliency required to perform consistently under the most exacting conditions. Translated as "true forged," Honyaki embodies the traditional art of Japanese sword-making, utilizing a single piece of Blue Steel #2 (HRC 65), which is heated in hearths reaching thousands of degrees and quenched by the Ao Honyaki method to achieve exceptional hardness and durability. The blade is polished to a brilliant mirror finish, with incandescent wisps of light glimmering across its edge, known as Hamon.

Our Mizu Yaki Aoko Honyaki Knives are complemented by a traditional Japanese handle crafted from premium Ebony, affixed with an Ironwood bolster. Each knife comes with a protective lacquered magnolia wood saya cover, which is easy to clean and resistant to stains and odors. This saya cover not only encases the knife for protection but also enhances its appearance when not in use. For maintenance, hand wash with a mild cleanser; our knives are NSF approved and handmade by skilled tradesmen in Japan.
