CUSTOM BACK ORDER ONLY. The Kengata Gyomen Shiage Honyaki Sakimaru Takobiki is a stunning example of Japanese craftsmanship, meticulously created by one of Yoshihiro’s master artisans in Sakai, Japan. The blade features a unique hamon pattern designed to resemble the majestic Fuji Mountain with a Crescent Moon, making this knife not only a functional tool but also a one-of-a-kind piece of art.

Handmade with extraordinary skill, our Yoshihiro Honyaki knives are forged from the highest quality steel, following traditional techniques rooted in ancient Japanese sword-making. The term "Honyaki" translates to "true forged," representing the pinnacle of Japanese knife-making artistry. Crafted from a single piece of White Steel #1 with a remarkable hardness of 66 on the Rockwell scale, each knife is heated in hearths that reach thousands of degrees before being quenched in cool water, resulting in exceptional durability and performance.

This exquisite knife is complemented by a handcrafted premium Ebony wood handle, affixed with a Water Buffalo horn bolster. Additionally, a protective wooden sheath called a Saya is included, safeguarding the knife and enhancing its aesthetic appeal when not in use.

The Sakimaru Takobiki is a long slicing knife designed for achieving paper-thin slices of fish for sashimi, while its round sharp tip is particularly effective for cutting through the long tentacles of sashimi. The elegant, thin blade allows for long, uninterrupted strokes, preserving the integrity and freshness of the ingredients. Compared to a Yanagi, the Takobiki is thinner and offers a unique approach to preparing delicate ingredients. It excels at cutting perfect sushi rolls, and the rounded tip can be easily angled along the cutting board for clean, precise slices.

Elevate your culinary experience with the Kengata Gyomen Shiage Honyaki Sakimaru Takobiki, a handcrafted knife that combines beauty and functionality in a way that transforms even the simplest tasks into extraordinary culinary achievements.
