CUSTOM BACK ORDER ONLY. This exquisite Kengata Gyomen Shiage Honyaki Sakimaru Takobiki is a masterpiece created by one of Yoshihiro’s finest knife masters in Sakai, Japan. The hamon (the pattern of waves on the blade) was uniquely designed to resemble Japan’s iconic Mount Fuji under the light of a full moon. This knife is not only a work of art but also a one-of-a-kind creation.

Our handmade Yoshihiro Honyaki knives are crafted with extraordinary skill, forged from the highest quality steel using the traditional methods of ancient Japanese sword making. Master artisans, some with over 50 years of experience, employ time-honored techniques to create these knives, ensuring precision and durability. Honyaki translates to "true forged," representing the pinnacle of Japanese knife-making. A single piece of White Steel #1, with a Rockwell hardness of 66, is carefully heated in hearths that reach temperatures in the thousands and then quenched in cool water, creating knives of unparalleled performance, with an impressive balance of aesthetics and functionality.

Each Yoshihiro Honyaki knife is complemented with a traditional Japanese-style handcrafted Ebony wood handle of the highest quality, affixed with a Water Buffalo horn bolster for added durability and elegance. A protective wooden sheath, known as a Saya, is included, ensuring the knife stays safe and adds to its refined appearance when not in use.

The Sakimaru Takobiki is a long slicing knife specifically designed for cutting paper-thin slices of fish for sashimi, while its rounded, sharp tip is perfect for slicing through the long tentacles of octopus. The beauty of its elegant thin blade lies in its ability to glide through ingredients in long uninterrupted strokes, maintaining the integrity and freshness of delicate items. Thinner than a Yanagi, the Takobiki is a unique tool ideal for preparing the most delicate of ingredients. It is also highly valued for its precision in cutting perfect sushi rolls, with its rounded tip allowing for clean and effortless slices along the cutting board. Even the simplest tasks are elevated with a handcrafted knife that is as functional as it is beautiful.
