Our handmade Yoshihiro Mizu Yaki Honyaki knives are crafted with extraordinary skill, forged from the highest quality steel using the traditional methods of ancient Japanese sword making. Our master artisans, some with over 50 years of experience, employ a meticulous Mizu Yaki Honyaki process that involves pure water quenching under the most precise conditions. Honyaki translates to "true forged," reflecting the mastery that draws out the hardness of refined steel while ensuring the resiliency needed for consistent performance. Each knife is crafted from a single piece of White Steel #2, achieving a hardness of 65 on the Rockwell scale. Heated in hearths reaching thousands of degrees and quenched in cool water, these knives embody exceptional quality, blending aesthetics and performance. The blade is polished to a brilliant mirror finish, showcasing incandescent wisps of light across its edge (Hamon).

The Yoshihiro Mizu Yaki Honyaki Kiritsuke knife features a traditional Japanese style Premium Ebony handle with a Triple Nickel Silver Ring bolster, complemented by a protective wooden sheath known as a Saya. This Saya is brush-coated with a non-toxic lacquer made from organic tree saps sourced in Japan, enhancing the knife's appearance when not in use while providing essential protection.
