Single Edged – Ginsan
Ginsan (Silver #3, or Ginsan-ko) is a high-carbon stain-resistant steel. It sharpens and feels much like traditional White Steel but has enough chromium to resist rust. For many sushi chefs it is the ideal compromise: a traditional single-bevel knife with a fine edge that is far more forgiving in a wet, busy kitchen.
This collection covers single-edged Ginsan yanagi, usuba, kenmuki, mioroshi and maguro bocho, available in Hongasumi and Mizu Yaki finishes with yew, rosewood and ebony handles. For double-edged Ginsan knives, see Ginsan (Silver 3) Steel.
