Our Ice Hardened Molybdenum Series knives are forged from a single piece of high-carbon AUS10 stainless steel. The Ice Hardening process enhances the steel’s hardness and resilience, creating a blade that’s both lightweight and razor-sharp.
The Kiritsuke is a multipurpose Japanese chef knife traditionally used by experienced chefs. Its long, flat profile excels at push-cutting vegetables, while the angled tip allows for precision work such as julienning or slicing fish.
