Honyaki translates to "true forged" and embodies the purest reflection of the traditional art of Japanese sword-making. Our master craftsmen employ the same techniques passed down through generations by ancient swordsmiths, producing knives of the highest caliber. Hand-forging these exceptional knives from a single piece of high-carbon steel requires extraordinary skill, enabling them to withstand temperatures that soar into the thousands within a blazing furnace.

Our handmade Yoshihiro Honyaki knives are crafted with remarkable expertise, forged from the finest quality steel using age-old methods that reflect the essence of Japanese craftsmanship. The term Honyaki signifies true forged, representing the pinnacle of Japanese knives. This process necessitates master knife smiths who are well-versed in traditional sword-making techniques. Crafted from a single piece of White Steel #2, each knife achieves a hardness of 65 on the Rockwell scale. The steel is meticulously heated in specialized hearths, quenched in cool water for enhanced hardness, and polished to a brilliant mirror finish, creating knives that seamlessly blend aesthetics and performance.

Complementing our Yoshihiro Honyaki knives is a handcrafted premium Ebony wood handle, renowned for its quality, affixed with a Water Buffalo horn bolster. Each knife also includes a protective wooden sheath, known as a Saya, which not only protects the blade but also enhances its appearance when not in use.

The Yanagi Kiritsuke is a long slicing knife designed to create thin slices of fish for sushi and sashimi, making it an essential tool in the repertoire of many chefs. The elegance of its thin blade allows for long, uninterrupted strokes, preserving the integrity and freshness of the ingredients. Slightly heavier than the Yanagi, the Yanagi Kiritsuke features a wider blade and a thicker spine, which helps balance the weight of the knife.
