Japanese knife-making descends directly from sword-making. Techniques developed for forging samurai swords carried over into kitchen cutlery, and that lineage still shapes how blades like ours are made today.

From Swords to Kitchen Knives

In the 1300s, Sakai City became a center for swordsmiths working with tamahagane steel — a labor-intensive, high-purity steel prized for sword-making. As Japan entered a more peaceful era and demand for swords declined, many of these smiths turned their forging skill toward kitchen knives.

Sakai remains one of Japan's major knife-making centers today, and much of the forging and finishing technique behind our blades traces back to that shift.

The Yoshihiro Name

Yoshihiro takes its name from a respected swordsmith of that era. We hold our knives to that same standard of craftsmanship — combining traditional forging methods with modern manufacturing and quality control, rather than treating the old techniques as decoration.
