Our Yoshihiro Honyaki knives are handcrafted with exceptional skill, forged from the highest quality steel using traditional methods honed over centuries in Japanese sword-making. The term "Honyaki" means "true forged," signifying the pinnacle of Japanese knife craftsmanship. Each knife is created from a single piece of White Steel #2, boasting a remarkable hardness of 65 on the Rockwell scale.
