The Usuba Kama-gata is a traditional Japanese vegetable knife reminiscent of a small cleaver. Our handmade Yoshihiro Kasumi knives are crafted by master artisans, combining exceptional craftsmanship with outstanding performance and value. Made from White Steel #2, with a hardness of 62 on the Rockwell scale, these knives are forged with iron to create the unique mist patterns known as Kasumi. This traditional process not only enhances the knife's aesthetic appeal but also contributes to its superior edge retention and cutting performance.

Each Yoshihiro Kasumi knife is complemented by a traditional Japanese-style handcrafted Rosewood handle, offering comfort and control during use. A protective wooden sheath, or Saya, is also included, ensuring the blade is safely stored when not in use and adding to the knife's refined appearance. With their impeccable craftsmanship and remarkable functionality, these knives are truly a chef's essential tool.
