Our Yoshihiro High-Speed Steel Sujihiki Knife is a state-of-the-art handcrafted Japanese slicing knife, designed to provide unparalleled sharpness, long-lasting edge retention, stain resistance, and ease of sharpening—outclassing many other knives available today. The exceptional performance of this knife is the result of combining advanced metallurgy with the unparalleled knowledge and skill of our master craftsmen.

The Sujihiki is a long, narrow slicing knife that effortlessly glides through meat, fish, or vegetables, preserving the integrity of each ingredient's freshness. Its versatile design makes it ideal for carving and fabricating large roasts, fish, or meats, as well as for thinly slicing delicate items such as cucumbers or smoked salmon. This knife serves as the Western-style equivalent of the traditional Yanagi knife.

High-Speed Steel is currently regarded as the most advanced stainless steel available for high-end kitchen knives. The steel’s composition, which includes a high percentage of carbon (1.3%) and tungsten (1.25%), provides exceptional wear resistance and durability. Originally used in industrial machinery, its properties make it perfect for the demanding tasks of professional kitchens, offering unmatched edge retention.

Forging knives from High-Speed Steel is a challenging process, with few manufacturers taking on the task due to the complexities involved, especially during the heat treatment process where the steel is heated to over 1000°C.
