Each handmade Yoshihiro Honyaki knife is crafted with remarkable expertise, forged from the highest quality steel following the traditional techniques of ancient Japanese sword making by master artisans, some of whom boast over 50 years of experience. Honyaki signifies true forged and epitomizes the pinnacle of Japanese knives, requiring the skill of experienced knifesmiths well-versed in the ancient craft. A single piece of White Steel #2, with a hardness rating of 65 on the Rockwell scale, is heated in hearths that reach extreme temperatures, quenched in cool water for enhanced hardness, and polished to a brilliant mirror finish, resulting in knives that harmoniously blend aesthetics and performance.

The Yoshihiro Honyaki knives feature a traditional Japanese-style handcrafted premium Ebony wood handle, affixed with a Water Buffalo horn bolster, offering an elegant grip. Included is a protective wooden sheath known as a Saya, which safeguards the knife while enhancing its appearance when not in use.

The Yanagi Kiritsuke is a long slicing knife designed specifically for crafting thin slices of fish for sushi and sashimi, making it an essential tool in the arsenal of many chefs.
