Our handmade Yoshihiro Mizu Yaki Honyaki knives are meticulously crafted with extraordinary skill, forged from the highest quality steel using traditional methods rooted in ancient Japanese sword-making. Each knife is handcrafted by our master artisans, many of whom have over 50 years of experience in their craft. The Mizu Yaki Honyaki process involves pure water quenching under precise conditions, ensuring the utmost quality. Honyaki, meaning "true forged," represents the pinnacle of Japanese knife-making, drawing out the hardness of refined steel while imparting the resiliency needed for consistent performance. Each knife is formed from a single piece of White Steel #2, achieving an impressive Rockwell hardness of 65. The steel is heated in hearths that reach thousands of degrees, quenched in cool water for extreme hardness, and polished to a brilliant mirror finish, resulting in a blade that shimmers with incandescent wisps of light along its edge (Hamon).

This Yoshihiro Mizu Yaki Honyaki Gyuto knife features a traditional Japanese-style premium ebony handle with a stunning triple nickel silver ring bolster. It comes with a protective wooden sheath known as a “Saya,” which not only protects the knife but also enhances its aesthetic appeal when not in use. The Saya is brush-coated with a non-toxic lacquer made from organic tree saps sourced in Japan, encasing each knife in beauty and craftsmanship.
