The Nashiji Kurouchi Stainless Clad Series is thinner than our standard Kurouchi stainless clad options, offering enhanced laser performance and ease of sharpening.
The term Kurouchi, meaning "Black-Forged," describes the knife's distinctive unpolished rustic finish. Our knives are clad in two layers of full Kurouchi stainless steel, ensuring durability and protection without sacrificing sharpness. With a hardness rating of 62-63 on the Rockwell scale, the inner core of White Steel #2 is renowned for its exceptional edge retention, allowing it to maintain a sharp edge over extended use.
