Suminagashi translates to "floating ink," and refers to the stunning, marbled, wave-like patterns that flow through the blade from tip to heel, creating a dynamic mosaic that reveals new formations with every sharpening. Only the most skilled artisans can craft such knives, blending aesthetics with unparalleled performance. Our handmade Yoshihiro Blue Steel Suminagashi knives are crafted with extraordinary precision by master artisans, employing the most intricate techniques of forging, layering, and hammering. The Aoko Blue Steel #1 with a Rockwell hardness of 64 is combined with iron to create blades of exceptional sharpness, durability, and intricate design. These knives are not only functional but are works of art in their own right, as the Suminagashi patterns evolve with each use and sharpening, giving each knife a unique appearance.

The Yoshihiro Blue Steel #1 Suminagashi knives are paired with a traditional Japanese-style handcrafted Ebony wood handle, affixed with a Water Buffalo horn bolster, ensuring a comfortable and secure grip. A protective wooden Saya sheath is included to safeguard the blade and enhance its elegant appearance when not in use. The Deba knife, known for its weight and precision, is essential for filleting and butchering whole fish. Its heft enables it to cut through fish heads and bones, while its pointed tip is perfect for separating flesh from bones. Though it can be used for cutting chicken and meat, it is not recommended for larger bones.
